Ask your butcher for either a 2lb lean beef fillet or a sirloin joint for this recipe. The beef needs to marinate overnight but it’s very quick to prepare and cook the next day. This recipe is ideal for a summer lunch and is cooked in the oven for 25 minutes for rare or 35 minutes for medium. Once cooked, allow the beef to cook for half an hour before serving.
